Easy Korean Japchae Recipe(Korean Glass Noodles Stir Fry)

Japchae is a popular Korean dish made with glass noodles(also known as sweet potato noodles), vegetables, and meat. However, there are also vegetarian and vegan versions of the dish avaliable, which replace the meat with other plant-based proteins or simply omit it altogether. The dish is versatile and can be customized to suit individual dietary preferences and tastes.

잡채(Japchae) is a Korean dish that consists of stir-fried glass noodles made form sweet potato starch, mixed with vegetables, meat, and seasoned woth soy sauce and sesame oil. It is often served as a side dish or main course during Korean festive occastions and celebrations. 

 

The dish has a combination of sweet and savory flavors, woth a chewy and slightly slippery texture. Japchae usually contatins various vegetables, such as carrots, spniach, mushrooms, and onions and the meat used can be beef, chicken, or pork. The dish is commoly garniched woth sesame seeds and green onions. It is a popular and beloved dish in Korean cuisine and can be enjoyed both hot and cold.

Ingredients

glass noodles, soy sauce, sesame oil

  • 8 oz sweet potato noodles (glass noodles)
  • 4 oz beef(sirloin or ribeye), thinly sliced
  • 2 tbsp begetable oil
  • 2 cloves garlic, minced
  • 1/2 onion, sliced
  • 2-3 green onions, cut into 2-inch pieces
  • 1 red bell pepper, sliced
  • 2 oz spinach
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds
  • Salt and pepper to taste

 

How to Make Japchae?

1. Soak the sweet potato noodles in cold water for 30 minutes. Drain and set aside.

2. In a mixing bowl, combine the beef with 1 tablespoon of soy sauce, 1 tablespoon of sugar, 1 tablespoon of sesame oil, and a pinch of black pepper. Mix well and set aside.

3. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and stir-fry for 30 seconds. Add the marinated beef and stir-fry for 2-3 minutes until cooked. Transfer to a plate.

4. In the same skillet, heat another tablespoon of vegetable oil over medium heat. Add the onion and stir-fry for 2-3 minutes until translucent. Add the green onions, red bell pepper, and spinach, and stir-fry for another 2-3 minutes until the vegetable are tender. Transfer to a plate with the beef.

5. In the same skillet, add the soaked noodles and 1 tablespoon of say sauce. Stir-fry for 2-3 minutes until the noodles are cooked.

6. Add the cooked beef and vegetables to the skillet with the noodles. Add 1 tablespoon of sesame seeds and stir-fry for aother 2-3 minutes until everything is well combined and heated through. 

7. Serve hot or cold, garnished with extra sesame seed and green onions.

Storing and Reheating

Storing:

  • Allow the japchae to cool to room temperature befor storing.
  • Transfer the japchare to an airtight container and refrigerate within two hours of cooking.
  • Japchae can be stored in the refrigerator for up to three days.

Reheating:

  • For best results, reheat japchae on the stoe in a non-stick pan or wok.
  • If the japchae is dry, add a small amount of water or vegetable broth to the pan to help loosen it up.
  • Heat the japchae on low to medium heat until it it hot, stirring occasionally to prevent if form stickin to the pan.
  • Japchae can also be reheated in the microwave, but the noodled may become rubbery and the vegetables may become mushy.
  • When reheating in the mircowave, cover the japchar woth a damp paper towel to prevent it form drying out and microwave on high for 1-2 minutes or until hot.

Remember, japchae teates best when it is freshly made, so try to eat it as soon as possinle after cooking.
